The edible wild herbs in Alberobello are numerous and often not very known. They take in the local dialect names often imaginative and interesting, such as Lattarole, Piscialucertole, Cristalli, Centonodi, Culicchi etc. The most common as wild chicory and the sivone, can be purchased during the traditional Thursday market. The cooking is typical boiled, often combined with other dishes such as mashed beans.
