Brasciole with tomato sauce
This tasty dish is made of veal rolls cooked into tomato sauce. Brasciole are rolls stuffed with cheese, garlic, parsley, shaded with white wine and cooked for hours in a clay pot. Some variants make brasciole with spicy fresh chili or, according to the custom of Putignano, sprinkled with the farinella, a traditional flour of chickpea and barley.
