Sheep and goat cheese
The large sheep and goat farms of Puglia produce good milk for the many citizens dairies. Among the fresh and aged cheeses product, definitely worth trying is the small cacioricotta, a salty semi-hard cheese, made of goat's milk, sheep's or mixed.
