The traditional fried focaccias are a specialty of Alberobello made only with flour, yeast and salt water, very tasty if eaten with the typical spicy cheese called “ricotta forte”, a creamy ricotta cheese, or one of the many sauces as trik trak (caponata of peppers and chilli).
